Honduran Tres Leches Cake

Tres leches — literally "three milks" — is one of the most beloved desserts in Honduras and across Latin America. A light, airy sponge cake is soaked in a mixture of three milks until wonderfully moist, then crowned with softly whipped cream.

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 5 eggs, separated
  • 1 cup sugar, divided
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1/4 cup whole milk (for the soak)
  • 1 1/2 cups heavy cream, whipped
  • Ground cinnamon, to serve

Instructions

  1. Preheat the oven to 350F (175C) and grease a 9x13 inch pan. Whisk the flour and baking powder together.
  2. Beat the egg yolks with 3/4 cup sugar until pale, then mix in the milk and vanilla. Fold in the flour.
  3. Whip the egg whites to soft peaks, add the remaining sugar and beat to stiff peaks, then gently fold into the batter.
  4. Bake 25 to 30 minutes until golden and springy. Cool, then pierce all over with a fork.
  5. Stir together the evaporated milk, condensed milk and whole milk, and pour slowly over the cake.
  6. Chill at least 4 hours or overnight. Top with whipped cream and a dusting of cinnamon before serving.
