Honduran Atol de Elote

Atol(e) De Elote (Sweet Corn Drink) is a traditional Central American beverage. It is basically a sweet, smooth, and thickened drink made from mostly corn. The drink is served warm and the basic recipe is frequently flavored with spices such as vanilla and cinnamon. Currently atoles with fruit purГ©es added can also be found.

Atol de Elote is part of the Mayan culinary heritage, and is for many Central Americans part of a morning and midday routine. It is believed to be as therapeuic as chicken soup is to many other cultures.

Atol de Etole is made by cutting kernels off the corn cobs, scraping the cobs with a knife to remove all their milk and blending with water. Next the pureed corn is strained through a sieve and solids are discarded, sugar and salt are added to the liquid and then boiled. Served in mugs with a sprinkle of cinnamon.

Atol de elote has a wonderfully fresh flavor. For wonderful effect, it could be served in a bowl made from a dried calabash gourd.
